The number 2.60 sounds like a stable release, but in fact it's only the start of a new development cycle.
Anybody wanting to try Blender better pick the last release of the 2.5x series.

So is 2.5x more stable or more bleeding edge? I remember they did a huge UI re-vamp in the 2.50 version, is that in the 2.60 as well?

It is a stable release: http://www.blender.org/development/

Given the number of fixes and new features I would go with 2.60 instead of 2.5x: http://wiki.blender.org/index.php/De.../changelog_260

Blender 2.6 is intended to be a stable release. See the release notes for a (partial) list of bug fixes:

They are not going to alter the UI for some time now, at the least not until the next cleanup of the UI.

Annoyances: "Copy last prefferances" does still NOT copy over the bookmarks and the last used files.

As I understand it the release cycle for 2.6x is somewhat different than in the past. They are attempting to tighten thing up and maintain stability throughout by only merging stable branches into trunk. There is no indication that 2.60-2.64 are alpha this time though each of those will be bringing in new features planned for the 2.6x series.

Still 2.59 could probably be considered the stable version and 2.60 the bleeding edge version. It just promises to be a less drastic distinction this time around.

Blender 2.60 is the latest stable version*, but with new features. There is no reason to use 2.59 for fear of stability since the "new" Blender has been marked officially stable since version 2.57. In a way this new release is the culmination of all the work that went into the 2.5x series, and the beginning of building atop of that base by adding new features, but still with stability as main priority.

                * There are a few minor bugs discovered in 2.60 after release, so expect a version 2.60a release in a weeks time.
