lmsensors is for checking temperature, not for controlling it. Controlling works via cpu-governours, be sure to enable amd driver an set default governour to ondemand or conservative. You can watch the current state with cpufreq-info.
Additionally cpu itself has overheat protection, so it wont overheat, it will start skipping cycles.
