The AMD EPYC 7763 2P server was benefiting in some tests more than the Ice Lake server.

While in some workloads the difference out of Debian 11 was much less.

Debian 11 can mean longer compile times with the newer GCC compiler as the additional passes/optimizations aiming for greater run-time performance generally consume additional build time.

The greater run-time performance though of the newer components with Debian 11 though can be quite dramatic in some cases.
